CONNAGE CLAVA - (200g)
Connage Clava is an Award Winning brie-style cheese, handcrafted on the family farm, by the shores of the Moray Firth.
Clava is named after the prehistoric burial cairns of Balnuaran of Clava a few miles from our family farm in the Scottish Highlands. Their circular ring structure is mirrored in our brie style cheese.
This smooth, pasteurised creamy, quite strong earthy brie is delicious. As it ripens, Clava becomes silky and at its best when the texture has become soft and lucious. To achieve excellent results, the very delicate curd is hand ladled into moulds and matured carefully in a temperature controlled store before being individually hand wrapped.
“Clava brie is a mild and engaging cheese. With hidden depths of bitterness and coolness it can be best eaten either straight from a chilled fridge or left to ripen to bring out its funky, buttery taste and unique grassy flavour” (The List - 2014)
